DESCRIPTION
It is a straw yellow wine with light greenish reflections, it has a long bouquet that recalls white peach, lemon balm and aromatic herbs.
Of particular finesse, the taste is savoury, broad and
soft but with an acidic vein that gives freshness
with a characteristic aftertaste. It is served as an aperitif and goes well with great seafood cuisine.

AGRICULTURE
The planting distances are quite small (2 m x 0.85) to limit the production of each individual plant.
The training system is espalier with guyot pruning,
which requires the annual renewal of the fruiting canopy. The soil is
fertilized every other year with composted organic fertilizers and
worked mechanically.

AGEING
Vinified with soft pressing, cooled and clean must
by static decantation. Fermentation at controlled temperature and with selected yeasts
