DESCRIPTION
It is a wine with an intense golden yellow color with a light amber tone, it has a long bouquet that recalls dried apricots, jam, dates and figs. Very intense, the taste is sweet, full, soft but with an acidic vein that gives freshness, with an aftertaste characteristic of moldy wines. Excellent with blue cheeses or foie gras, ideal as an after-dinner drink accompanied by desserts.

AGRICULTURE
The planting distances are quite small (2 m x 0.85) to limit the production of each individual plant.
The training system is espalier with guyot pruning, which requires the annual renewal of the fruiting canopy. The soil is fertilized every other year with composted organic fertilizers and worked mechanically.

AGEING
Grapes harvested with 6 interventions in the field, as the grapes have matured thanks to the action of botrytis cinerea, are vinified with a short maceration, must refrigerated and cleaned by static decantation. Fermentation at a controlled temperature and with selected yeasts.
